A quick meal to go - Spinach Egg Cups

Mix 4 egg whites and 2 whole eggs with 1/2 c skim milk, 1 cup chopped spinach (drained if frozen), 1/3c fat free crumbled feta cheese, black pepper to taste.

Spray muffin/cupcake pan with non-stick spray. Spoon mixture evenly into tray. Bake for 18 mins at 375. Loosen and cool. Freeze (2 to a bag) and reheat in microwave for a fast and healthy meal.

    this looks like a good idea for a fast breakfast...I am usually running around so much in the morning I don't always eat well...but this sounds easy. Thanks

    Yummy! I need to start making things like this in the morning. I"m usually always running behind, so I grab a packet of oatmeal or a thing of yogurt and a banana...and hit the door.

  • I make these in a muffin pan that holds 12 muffins. I consider 2 egg cups a serving and I calculated it to be 68 Cal 4 Carbs 2 Fat 10 Protein

    Use a dash of red hot if you want a little spice. The orginal recipe called for egg beaters and fat free cheddar so feel free to substitute.
