Potato-Cauliflower Mash With Goat Cheese ( ONLY 100 Cals)

Serves: 8

4 cups white potatoes, peeled and cut into 1/2' chunks
3 cups cauliflower, cut into small florets
1 pkg fine herb goat milk cheese
1 tsp salt
dash of pepper

1) Put potatoes in a saucepan and cover with cold salted water. Bring to a boil and simmer until tender 10- 20 mins. Strain and reserve.
2) Cook cauliflower in boiling water until tender, around 10 mins. Strain and Reserve.
3) Combine potatoes, cauliflower, cheese, salt & pepper in a bowl and mash until blended, It's ok to have a few lumps. Transfer to a round or rectangular baking dish and bake for 20 mins at 350F in a preheated oven.

Per Serving Size: 1/8 of the recipe.
100 calories, 4g protien, 3.5g total fat, 2g saturated fat, 15mg cholesterol, 13g carbohydrates, 2g fibre, 520mg sodium, 320mg potassium.
