So... I know this isn't some miracle discovery, but this is my new favorite lunch! I'm going to play around with the veggies and dressings to keep it interesting. I ate it with a 2% mozz string cheese and a kiwi fruit for a very filling lunch. Whole wheat pasta keeps me full for much longer than regular, plus I really liked the texture in this.

3/4 cup whole wheat rotini
5 baby carrots
small hand full snow peas
5 grape tomatoes
2 tbs hidden valley light ranch

Cut the veggies into bite-sized peices. Boil the pasta and throw in the carrots and snow peas with 2-3 minutes to go. Drain, add the tomatoes and dressing. That's all! I actually cooked my pasta and veggies in the microwave, which made this very quick and easy.

This is a good idea. I always liked those boxed pasta salads and added veggies and cheese to them, but I always used full fat mayo  I'm even thinking I could make this and use the Walden Farms Italian totally free dressing......thanks!
