How do you like your avocado?!

I bought a few avocado's today, starting during the week I would love to try and make a delicious / healthy avocado sandwich since I just can't seem to eat avocado by itself lol. Any delicious, healthy recipes you can provide? Or how do you like your avocado? And sandwich ideas? Any ideas are helpful & appreciated.. thanks!

I love avocado sliced on chedder rice cakes. So good! I also like them plain, with a little salt.0

I love them on low fat whole grain tortillas! Add some cheddar cheese, and vegetables and you got yourself one delicious vegetarian wrap!0

or homemade guacamole is always good too.0

I cut it into small pieces and mix it with salsa, then dip carrots into the mixture.0

Guacamole is pretty easy - sometimes I mash it and add a little taco seasoning.0

I mash it, mix in some salsa, and stir in some black beans. I eat it with soy flax seed tortilla chips.0

I cube the avocado before it gets mushy toss it with diced fresh tomatoes, diced white onions, little bit of olive oil, red wine vinegar and salt and pepper to taste. Great healthy salad.0

Guacamole!
When I'm in a pinch, I mash it up, add some lemon juice, garlic, and cracked red pepper.
When I have more time on my hands, I chop up red onions and add salsa to the above mixture.
Spread it on Triscuits and you're in HEAVEN!I use it will light cream cheese as a spread, its my version of PB and J

Also I like mine spread on toast. And eaten plain with a spoon.
And on salad and sandwiches.

If you like shrimp; try cutting up cooked shrimp into pieces, add small cubes of avocado, some salsa and a squirt of fresh lemon. I add Pampered Chef Citrus and Basil & Lemon Pepper Rubs but you can add your preference of seasoning. Tastes so good!0

Alternately, in a spicy California salad.
2 imitation crab sticks (leg style), chopped up
1/4 avocado, chopped
about an inch of cucumber, peeled and thinly sliced, then sliced again into quarters.
1 tablespoon of light mayo
1 teaspoon of sriracha chili sauce
Mix, eat, yum. It's a good snack or along with something else small for a meal.0 -
