Okay, so this is FABULOUS...
8 medium apples (Gala, Honeycrisp...whatever apples...I used 4 Gala and 4 Honeycrisp)
1 lemon peel (use vegetable peeler, and I peeled all the way around the lemon once)
1 tsp lemon juice (squeezed from the lemon I peeled)
5 tsp unpacked brown sugar (I used the Splenda Brown Sugar Blend)
1 3inch cinnamon stick
1) Peel, core, and slice the apples (I used the Pampered Chef Apple Peeler Corer Slicer and then cut them into quarters)
2) Place them in Crock Pot
3) Put the brown sugar, lemon peel, lemon juice, and cinnamon stick in there on top (I did NOT stir it all up, just left it on top)
4) Turn the Crock Pot on Medium for 6 hours (I got wind that the newer Crock Pots cook faster, so to only cook 4 hours)
5) After an hour or so, stir it...then within that 4 hour time period I only stirred it like 3 other times
6) After the Crock Pot goes off, take the lemon peel and cinnamon stick out.
7) I just took a potato masher, and mashed out majority of the soft clumps of apples, but you can keep stirring and leave it chunky, or she said to take an immersion blender (which I don't have) and completely smooth it out.
The flavors will jump RIGHT out and explode in your mouth like fireworks! Sweet, tangy, juicy, cinnamon-y...amazingness. Try it ) I'm sure you'll be hooked! Take a look at my diary and see the cal/fat/sodium/carb/protein/fiber stats. I put that it makes 12 servings per batch (which is 1/4 cup per serving) - I'm about to go check that out RIGHT now and let you know!

I wonder if it will freeze alright.. might be worth making a double batch if it does. Maybe use some on a lean pork chop for dinner.. oh man.. *homer drool*0 -

I just looked on the website, and a person said she freezes it in ziploc reusable containers and keeps it in the (deep) freezer for months at a time...and Gina (the girl who runs skinnytaste.com) said that its a great idea to freeze in 1 cup servings! )0 -
It honestly tastes like something we should NOT be eating...lol. Because its soooo freakin delicious...and sweet...and YUM.0

And a warning for the not-so-sweet tooth person, you don't even have to add brown sugar, because the apples are sweet themselves... or just use less brown sugar!0
