Meatloaf Muffins

Someone posted recently about mini-meatloaves made in a muffin pan, maybe it was in one of the other forums. But I had to try it. Searched online for a recipe, combined a couple of them and came up with this. They were very good, and moist. I tend to wind up with very dry meatloaf, these were great! I used cupcake papers too, so no cleanup!
4 tablespoons dried chopped onion
1 medium carrot shredded
1 medium zucchini shredded
1 teaspoon dried oregano
1/4 teaspoon garlic powder
1 cup ketchup, divided
1 pound ground turkey, extra lean (raw)
1 cup finely crushed multigrain saltine crackers (about 20)
2 tablespoons prepared mustard
1 tablespoons chili powder
2 tablespoon Worcestershire sauce
1/4 teaspoon freshly ground black pepper
2 large eggs
Cooking spray
Preheat oven to 350°.
Combine 1/2 cup ketchup, and the remaining ingredients except cooking spray in a large bowl.
Spoon the meat mixture into 12 muffin cups coated with cooking spray (or use cupcake liners). Top each with 2 teaspoons ketchup. Bake at 350° for 25 minutes or until a thermometer registers 160°. Let stand for 5 minutes.
2 muffins per serving @ 213 calories per serving

I LOVE the different recipes out there that use the muffin pans!!!!! I would have never thought of using them, because we're conditioned to associate muffin pans with fatty sweets! Just brilliant I tell you lol!0

I discovered these a few years ago when I did weight watchers. They are seriously awesome and make it so much easier for serving size. My 3 year old calls them cupcakes.. whatever gets her to eat it! They are also easy to hide veggies in.
Instead of saltines though I use breadcrumbs that I "make" at home. I toast the ends of my bread (you know the part no one eats) and stick them in the food processor. Just use herbs to season it. The original recipe uses stove top stuffing mix.0 -

That's a great idea for the ends of the bread! I'm single and don't eat many sandwiches so a loaf of bread either starts to grow legs of its own if I leave it out or freezer burned if I freeze it, long before I eat the whole loaf
I was actually wandering around the grocery store today looking for something about the size of 1/2 or 1/3 of a loaf of bread. I finally found some bread twists in the bakery, each about the size of 2 dinner rolls.0 -
made them last week and they were terrific!! i may try the ends of bread thing next time.0
