Any yummy broccoli recipes?

I have about a gallon of fresh broccoli in my fridge that I need to get rid of :P Anyone know any healthy, tasty ways to cook it without cheese or butter?

    I add it to soup... it works real good that way.
  • Chicken and some cream of chicken soup. little bit of curry seasoning bread crumbs on top and little low fat cheese. VERY YUMMY casserole dish.
  • I like to steam broccoli and toss it with a little bit of general tso stirfry sauce (like a tablespoon, not too much) and serve it over some brown rice. :)

    Steamed broccoli with garlic powder!! Love Broccoli, just don't like the smell it permeates in the house whilst cooking it..hehe :laugh:

    I throw it in..when I am roasting my boneless chicken with diced tomatoes, and red potatoes, also, yum!

    Sounds perfect! How much garlic powder do you suggest?

    Stir fry, steamed, although my all-time favorite is a a dish i took and modified for me

    Chicken breast (boiled, pan cooked or crock pot with water), broccoli, carrots, corn, (any veggies u want), Whole wheat or your favorite pasta. Ragu light parmesean sauce or cheese sauce, cooked all ingredients then mix with sauce EASY!!!

    Or make a casserole and knock off the sauce and use a bit of shredded cheese both was are amazing a satisfying and can be modified to you liking i love it!!

    Our favorite way is to roast it. Toss with EVOO & some seasonings of your choice, roast at 425*ish until it's done and bits are crispy, 20min ish.

    Yep, I roast mine with EVOO, fresh sliced garlic, and pine nuts and then top with a squeeze of lemon juice and some grated parmesan cheese.

    Never thought of roasting brocolli but now I really want to try it!

    Roasting it until its crispy (with sea salt) gets rid of my cravings for potato chips! That and kale chips...
  • I like to steam it and eat it with some balsamic vinegar. :) Or have it raw with some hummus. I also cook it in veggie stir frys. I love broccoli!

    Steam it or just eat it raw. I have literally eaten an entire head (crown?) of broccoli in one go - just washed it off and chowed down.
  • I like to just barely steam it, then toss it with some EVOO, minced garlic, salt, pepper, and chili flakes. Then I throw it on the grill. I use a George Forman grill, but a grill pan or outdoor grill would be great too. Works really nice with chicken or Tofu.

    Broccoli polonaise - steamed broccoli with breadcrumbs (if you're not low carb) fried in a little olive oil, plus some finely chopped egg (white only, if you please) and a sprinkle of parmesan...
