black eyed pea salad
Options
I made this up yesterday because I was bored with the same old food.
I took some dried black eyed peas and soaked them in water about 8 hours. Then I put a small amount of olive oil in a pan and sauteed the peas until light brown, crisp on the outside. I then cooled them and added some red bell pepper a little red wine vinegar and a small amount of light ranch.
It is very tasty.... not sure of the nutrition content because I added each individual thing with my dinner last night.
