Quick Pizza Margherita
Serves 1
Use this same method to make any style pizza you like. Simply top with items that suit your taste like pepperoni, diced ham, sliced peppers and onions or crumbled feta cheese.
Ingredients
1 round pita bread
Extra virgin olive oil*
1 very ripe tomato, sliced
1 ounce fresh goat cheese, cut into rounds*
1 to 2 teaspoons prepared basil pesto*
Parmesan cheese (optional)
Method
Position rack in center of oven. Place baking sheet on rack. Preheat oven to 400°F. Brush both sides of pita with olive oil. Cover one side with sliced tomatoes. Transfer to hot baking sheet. Bake 5 minutes then add goat cheese and dot with pesto. Sprinkle with Parmesan, if desired. Bake another 5 minutes or until cheese melts and crust is crispy.

Whole wheat pita pizza is a staple in my food choices! They are yummmmmmy. And so easy. It's impossible to find whole wheat pizzas, too....so this is the perfect solution. I make one with the parmesan cheese and jalapeno dip from costco - add tomato or mushrooms or whatever. Very tasty for lunch at the office, a 10-minute-fix.0
