I'm changing up my diet a bit and trying really really hard to actually meet 1000 calories EVERY day.

With 50lbs lost, I'm still not sure when I have a well balanced diet or not, but this is a sample of my menu this week (Yes, I eat the same thing everyday... I know it seems boring and repetitive, but I lose the most the weeks that I just eat the same thing everyday)

Wake up:
1 Cup of Coconut Milk

Breakfast:
1 Packet of High Fiber/Weight Control Oatmeal
1 Cup of Coffee with Sugar Free Peppermint Mocha Creamer

Morning Snack:
Granny Smith Apple

Pre Workout Snack:
2 Servings Low Fat String Cheese, 1 Clementine

Post Workout "Snack"
Muscle Milk Light

Lunch:
Brown Rice and a MorningStar Black Bean Burger Patty

Dinner:
2 Servings of Green Giant "Healthy Weight" Steamed Veggies

Dessert:
Frozen Greek Yogurt

This brings me to 1105 Calories, but I am well over on my protein and fiber, and under on fat and carbs. My next calories each day come out to about 400, but I honestly can not eat any more food than that.

I think you are eating to little especially at your weigts. What if you throw in some almonds in your greek yogurt? You get good fat and calories. You may also want to add something at dinner.

if your net calories are only 400, you are not eating enough. Pretty simple. If you can't imagine eating more.. eat some high calorie, low density foods like nuts or trail mix, or full fat dairy. Less bulky foods with higher calories.

the only thing you eat for dinner are vegetables? Add a piece of salmon or some chicken or steak.

Plus, I"d eat one of your string cheeses with the apple and the other with the clementine, because eating fruit alone can possibly cause blood sugar spikes, but when you pair it with protein... it helps keep blood sugar stable. Just a suggestion though.

Kudos to being able to eat the same thing every day, I think I'd go crazy doing that.
