What's For Dinner?

Hi There! I am such a foodie. I love to cook, and I LOVE finding and trying all kinds of recipes for "normal" foods. I WILL NOT cook two dinners, one for me and one for my family, while I am dieting - or changing my lifestyle, if you will. So I look for "normal" foods to make for dinners. Stews, casseroles, main dishes etc. We aren't much into "funky" foods. haha

So how about we share our dinners everyday? Get and give great ideas. Sounds like a plan to me! Anyone doing this already?

Here's our dinner tonight:

Heavenly Hamburger Casserole

1lb lean ground beef
1 clove garlic, minced
chopped onion, to taste
26 oz tomato sauce
1 tsp sugar
4 oz fat free sour cream
8 oz fat free cream cheese
8 oz No Yolk egg noodles
1 cup part skim mozzarella cheese
Italian seasoning, seasoning salt, black pepper and garlic powder to taste

Brown beef with garlic and onion. Drain and add tomato sauce with sugar. Simmer while cooking noodles. Cook noodles accprding to package directions.

Lay noodles in bottom of 13 x 9 pan sprayed with cooking spray. Mix sour cream, cream cheese and seasonings. Spread over noodles (or mix with noodles before placing in the pan). Spread meat sauce over top. Sprinkle with shredded cheese. Bake at 350 degrees for 40 minutes or until bubbly.

8 Servings; Per Serving: 326 cal, 33 carbs. 7 fat, 24 protien, 3 fiber

    Yum!

    I wish I had a recipe to share, but I have papers due and Progresso soups were buy 1 get 1 free, so I'm having a can of soup tonight! Though I plan on making a batch of veggie chili from scratch this week. :)

    I'm making crepes, with chicken breast, spinach, mushroom, green peppers and swiss cheese.

    I'm in the same boat,,, I love to cook and bake. I have found ways to cut back on cals and fat. I use plain yogurt instead of sour cream. (tastes the same) and turkey instead of hamb. And no cal sweetner in place of all sugar.

    I love your idea :) My kids are having burritos tonight so, I don't have anything to share but, I would love to :)

    I'm never sure what's for dinner until it's pretty close to dinner time. I also don't cook from a recipe much. I'm more of a "add a little of this and some of that" type cook. Right now I'm thinking about kidney beans and rice with a side of creasy greens for dinner. But that could change. The creasy greens were picked over the weekend so they'll probably be on the menu while they are still fresh, just not sure of the rest.

    I don't cook two dinners either. It is just me and my husband, I cook like I normally do but what my portions - perfect example - last night he cooked burgers, he had 2 and I had one. Before I made this lifestyle change I would have had 2. Not sure what is for dinner tonight.

    Chicken and Mushrooms in a Garlic White Wine Sauce

    Here's a great tasting, quick and easy chicken dish; perfect for busy weeknights and great for those on a
    budget! I made this in about 20 minutes or less and served this over some brown rice cooked in chicken
    broth. I would have taken a photo of my dish, but we were all so eager to eat this while it was hot, that there
    was nothing left to photograph.
    This recipe was lightened up from Julia's Healthy Italian . She has twice as many family members in her
    household so I halved her recipe and cut back on the butter and olive oil. I then substituted half of the wine
    for fat free chicken broth and the results were fantastic. Can't wait to have the leftovers for lunch!
    If you prefer to use chicken breasts, slice them into large strips before you cook them. Be careful not to
    overcook your chicken, there's nothing worse than tough chicken. I gave you an estimated cooking time, but
    use your judgment as the time can differ depending on the size of the chicken. To make this gluten free, you
    ocan skip the flour, or use rice flour instead. Those of you who don't cook with wine, use chicken broth
    instead. For a side dish, may I suggest Baked Rice and Peas .

    Chicken and Mushrooms in a Garlic White Wine Sauce

    Gina's Weight Watcher Recipes
    Servings: 4 • Serving Size: divide between 4 • Old Points: 4 pts • Points+: 6 pts
    Calories: 169 • Fat: 5.5 g • Protein: 22.8 g • Carb: 4.9 g • Fiber: 1.2 g • Sugar: 1.7 g

    8 chicken tenderloins, 16 oz total
    2 tsp butter
    2 tsp olive oil
    1/4 cup all purpose flour* (use rice flour if gluten free)
    3-4 cloves garlic, minced
    12 oz sliced mushrooms
    1/4 cup white wine
    1/3 cup fat free chicken broth
    salt and fresh pepper to taste
    1/4 cup chopped fresh parsley

    Preheat oven to 200°. Season chicken with salt and pepper. Lightly dredge in flour.
    Heat a large skillet on medium heat; when hot add 1 tsp butter and 1 tsp olive oil. Add chicken to the skillet
    and cook on medium heat for about 5 minutes on each side, or until chicken is no longer pink. Set aside in
    a warm oven.
    Add additional oil and butter to the skillet, then garlic and cook a few seconds; add mushrooms, salt and
    pepper stirring occasionally until golden, about 5 minutes.
    Add wine, chicken broth, parsley; stir the pan with a wooden spoon breaking up any brown bits from the
    bottom of the pan. Cook a few more minutes or until the liquid reduces by half. Top the chicken with the
    mushroom sauce and serve.

    *I only used 1 tbsp of flour and tossed the rest, so calculations were for 1 tbsp flour only.

    I am having left over crock pot pork roast, saurkraut, sauteed zuchinni and yellow squash and 1/2 cup mashed potatoes that were made with 2 tbsp sour cream and chicken broth. All that for 476 calories! It's amazing!!!

    Low carb Mexican Casserole. Could probably be turned low-fat if you wanted to use low fat dairy.

    MEXICAN CASSEROLE


    Ingredients:

    1 1/2 lb ground beef
    1/4 cup onions
    chili powder
    cumin
    red pepper flakes or cayenne pepper
    salt and pepper to taste
    1 cup shredded cheddar cheese
    sour cream
    8 oz cream cheese softened
    jalepenos ( optional)
    picante sauce
    1/2 cup avocado sliced( optional) ~increases carbs (not induction friendly)
    green onions chopped


    Brown ground beef with onions. salt and pepper to taste. Drain, add rest of seasonings to meat ( chili powder etc.) In a small baking dish layer ground beef. Spread softened cream cheese on top of beef mixture. Layer picante sauce on next. ( usually use just 3 tbs...very little)layer Jalepenos next, then avocados. Top with cheese and green onions. Bake on 350 until cheese is melted. serve with a tbsp of sour cream on top.

    I'm having a Casual Gourmet chicken sausage link, with wheat couscous, speghetti squash, green beans, broccoli, mushrooms, shredded carrots, topped with 2% mozzerella cheese :)
  • Chicken fajita wraps!!

    3 Chicken breasts seasoned with cilantro, saffron, cumin - marinated in fresh squeezed lime juice for 1-2 days
    2 red peppers
    1 large onion
    1 tblsp minced garlic
    whole wheat flour tortillas

    pinto beans soaked, boiled and seasoned with balsamic vinegar, garlic, sea salt (prepared weekly for many meals)

    cut chicken into strips, saute onions and peppers & garlic in HOT cast iron pan, add chicken when the pan re-heats to temp and serve when chicken is done. Add beans on the side.

    1-2 glasses red wine!!

    I eat 2 wraps, approx 4oz beans, 8oz chicken

    calories= 458
    fat = 6g
    carb = 19g
    Protein = 30 g

    guaranteed to satisfy your hunger and desire for savory, zesty food! Feel free to add homemade salsa made with minced cilantro, diced onions, tomatoes and minced garlic with a spritz of lime juice. up to a 1/4 cup guac is awesome with this meal, the omega 3 is good for you and outweighs the fat issue.

    ps- if you must have cheese, use a scoop of cottage cheese, all sour creams and cheeses should be avoided while trying to lose weight~!

    For dinner tonight:

    Vegetarian (or not) Shepherd's Pie

    Ingredients:
    1 12-oz. pkg. Morning Star Meal Starters Crumbles (or 1 lb. ground turkey)
    1/4 C worcestershire sauce
    1 tbsp. granulated garlic
    1 tbsp. black pepper
    salt to taste
    1 pkg. Betty Crocker Instant Mashed Potatoes (any flavor -- We use roasted garlic flavor.)
    1 can corn
    4 slices cheese (any type -- We use Wellesley Farms Swiss, from BJ's.)

    Directions:
    1. Preheat oven to 400 degrees.
    2. Sauté Morning Star Crumbles in a pan with worcestershire, salt, pepper, and garlic.
    3. Place Crumbles in the bottom of a 9x9 casserole dish.
    4. Add the can of corn in a layer over the Crumbles.
    5. Prepare instant mashed potatoes according to package directions. Layer over corn and Crumbles in casserole dish.
    6. Place slices of cheese on top.
    7. Place casserole in oven for 10 minutes or until cheese is melted and casserole is heated through.
    8. Serve and enjoy!

    Tonight is the first time we're trying it with the Morning Star Crumbles. We decided to try them out, because my four-year-old doesn't like meat. I'll be sure to come back tonight and let everyone know how it works out!

    My hubby is in class until 10:30 tonight, so it's a Subway night for us... but tomorrow night is modified Chicken Divan (his favorite):

    Boneless, skinless chicken breasts
    Baby broccoli florets
    Shredded low-fat cheese (We use romano/asiago, but whatever you like)
    Low-fat cream of chicken soup
    Lemon juice
    Low-fat or fat-free mayo
    Butter/margerine or a substitute
    Bread crumbs (we use seasoned... but you can also ground down some Fiber One cereal and add spices to use a bread crumbs. Lots of fiber, low on calories and fat)

    Cook/season the chicken, prepare the broccoli as directed on the package. Spread the broccoli in a greased (Olive Oil Pam) casserole dish, add the chicken on top.

    In a bowl, mix 1 can of the low-fat cream of chicken soup, 1 cup (I think it's a cup - I'll check on that and fix it if it's wrong - doing this from memory) of low fat or fat free may, and a tbsp of lemon juice. Spread over the chicken. Top with cheese as desired.

    Melt about a TBSP of margerine/butter/substitute, add the bread crumbs and mix. Sprinkle that mixture over the top of the casserole

    Bake at... 450? (I'll check on that too) for a half hour.

    Serve over brown rice. :)

    8 servings from only 1lb. of raw hamburger and 8oz. of noodles? For me, that's too many calories for too little food.

    Dinner tonight is chicken stir-fry, no rice. 4 oz. chicken breast (baked beforehand), pea pods, broccoli, red & green peppers, water chestnuts, carrots, mushrooms, Ying's low sodium stir-fry sauce. Vegetables cooked in 3/4 tablespoon of olive oil, toss in chicken at the end just to heat through. Plus a huge salad of mixed greens and spinach with a poached egg on top and vinaigrette dressing. Around 400 calories. Minnesota Honeycrisp apple for dessert, tastes like candy!

    Hey everyone,

    I saw this topic and thought I would reply, especially since I could contribute something that most people wouldn't think of.

    We have some Birdseye steamfresh green beans, salad with lite raspberry/walnut vinigarette dressing, and the meat is 4 ounces of very lean Deer Backstrap Chops baked in some black pepper and one serving of Kraft Spicy Honey BBQ sauce.

    If anyone has ever had game meat you know that deer meat or other venison is a very lean, low sodium, high protein, and non preservative or hormone filled meat.
  • I made a "taco salad" with a tortilla, black beans, lime-cayenne chicken, some shredded cheddar cheese, homemade salsa, and lettuce...but sadly i dont have a recipe because i kinda just threw everything together with a prayer :) hahaha
