Great idea! I often make pepperoni chips for a low carb snack by sandwiching pepperoni slices between paper towels and microwaving for about a minute. The fat melts and is absorbed by the paper towel leaving a crispy "pepperoni chip" They are delicious and I often wonder why you just cant buy them that way in the store.
Anyway, yo could lower the fat content of your recipe a little by treating the pepperoni this way before you added it to your pizza recipe.0 -

We microwave this way, but only for about 20 seconds, any longer would burn. They are kind of small to begin with.0 -

OMG MIND IS BLOWN. New low carb recipe. 3g pepperoni pizza, FOR THE WHOLE PIZZA! Granted they are personal pan, but you only eat one.
So take about a half cup mozzerella cheese in a small warm nonstick pan, sprinkle oregeno or italian seasoning if you like, and let the bottom crisp to a dark brown, you can take a peek every now and then, should only take 3 mins. Slide the pizza out, microwave some pizza sauce, I recommend Great Value brand, they use natural ingredients, and has ALWAYS been the lower carb/sugar choice, esp in their canned vegetables. Then also microwave about 15 pepperonis, put the sauce on top of the cheese crisp, put the pepperonis on top of that, cut into four and enjoy. I can not stress how good this was, so much I had to make a post about it. And it was so simple.

I make mine in the oven. I call it the "FAT BOMB".
1) Cookie sheet with aluminum foil on it sprayed with some type of non-stick spray (Pam)
2) 1 cup of Mozz spread out, but not too spread out.
3) As much pepperoni as you want to put in there along with any vegetables and some sauce
4) 1/2 cup mozz to cover ingredients making like a blanket over it.
5) Bake on 350 for 5 minutes then broil on high for 2 or 3 minutes.
6) Take out of oven and immediately slide onto a plate and enjoy!
Next time I make one I will post a picture. Definitely takes my pizza cravings away and is so damn good.0 -

Another way to do low carb pizza is to pile mozzarella and your favorite toppings into portabella mushroom caps and cook in the oven. You have to eat it with a fork, but it's just like you took all the good stuff off a pizza!!!0 -
