"Gourmet" Recipe Suggestions, please?
Once/month my girlfriend and I host a non-family dinner simply b/c we like to cook. The goal is to be amazingly delicious and nutrition has nothing to do with it *LOL*
Our next dinner basics are:
Mixed Greens with Grilled Shrimp w/ Lemon Vinaigrette
Coffee/Pepper Rubbed Prime Rib Roast
Sky Blue Potatoes (essentially twice baked baby reds)
Do you have suggestions (link or recipe) for:
Veggie Side Dish (I'm thinking something green)
Appetizers
Something you've had before and love would be appreciated

My brain is a little fried from planning meals for my own family, so I can't think of anything off the top of my head. But I always use marthastewart.com to find great new recipes.0

I make a particular appetizer both at work (I work as a chef) as well as at home and for parties.. its a big hit, and very popular.
Its a deconstructed Spanakopita...
You would make a traditional spinach-feta mix, add some garlic, fresh lemon juice, a little black pepper... mix well... Pastene puts out a can of "Artichoke Bottoms"... You might be able to find this, we always do with our vendors...
on a half sheet pan, line your 'bottoms' and fill each individually with a good sized mound of spana-mix. Lightly dredge with panko-parmesan-greek oregano crumb mixture, lay a thinly sliced tomato on top, dusty with parmesan and bake in the oven on 375F for about 15-20 minutes. Then on broiler, a QUICK light browning for the tops.
This is DELISH!!!! This would also pair well with the shrimp you are planning!0 -

But seriously, they get a bad rep, but they are freaking delicious. I eat them for breakfast in the mornings with bacon and eggs.
My favorite brussels are roasted with maple syrup, chopped apple, bacon and shallots
Another good veggie side is roasted asparagus with olive oil, balsamic vinegar, served with pine nuts and shaved parmesan

Citrus Ricotta Dip
1 8 ounce container ricotta cheese
the zest of 1 orange
1/2 cup craisins
drizzle of honey
Mix ingredients together & serve w/ triscuit thin crisps0 -
I make a mushroom risotto with parmesan sofrito, then a put brie all over the top of it and bake it in the oven for an additional 20 mins at 400 in a casserole dish0
