How long will sandwiches stay good in the fridge?

Thinking of pre-making the family lunches a few days in advance (because we are always rushing to have them made)...

Usually things like PB&J, Ham & Cheese etc.

good as in wont spoil, probably a few days. Good as in taste and/or texture, I would say no longer than 8 hours, probably less.

bread goes stale pretty quickly if it's not kept away from air - that's why people tend not to eat the crust until last to keep the inside of the loaf a bit protected

for ham, usually packaged ham says eat within 3 days of opening, so use that as a guide

but really, the sandwich bread will go soggy well before you need to worry about any of that!

Just put the lunch meat in a separate baggie than the bread. You can even put a little mustard on the turkey and roll it up. They can still grab it and go quickly then assemble the sandwiches at school.

If you put some type of dressing like mayo, mustard, etc. the bread will be soggy after a few hours. The same is true of jelly, but if you coat both pieces of bread with pb and put the jelly/jam between it will prevent this.

If you can keep dry ingredients on the outside near the bread they should be okay overnight in the fridge.

When my husband was growing up, he said his mom always made their sandwiches up for the week - on the weekend before and froze them. Then each morning all they had to do was pop it out of the freezer into the lunch bag along with an apple or whatever else. And by lunch time it was thawed out and good.

I've never tried it myself, but he swears by it.

Another thing you could do (and this I do myself) is package things individually. Eg, ham & cheese in a ziploc baggie, 2 slices of bread in a ziploc baggie, and a small tupperware container of mayo. (or a small tupperware container of PB & J) and each person grabs what they need in the morning, and assembles the sandwich at lunch time. That way nothing goes soggy.
I'll do 2-3 days worth at a time and arrange 1 shelf of the fridge so its easy to figure out what to take in the morning.

a trick I found was if I toasted the bread before making a sandwich that would sit in a fridge for a bit before I ate it it didn't get so soggy. DO NOT put condiments on it though cause that is a sure fire way to get it to go soggy. PB&J should be fine but the PB might get stiff! As long as your Ham isn't too wet your sandwich should be fine but a firmer denser bread would be preferred rather then a light airy bread.

You can make them and freeze them. Works great makes things easy. But if you do pb&j put the peanut butter on both sides so the jelly doesnt make the bread soggy. Or if its a meat and cheese thing if you use mayo, mustard etc. put it between the meat ans cheese not touching the bread.

I would think that the sandwiches would get soggy after just a day. But as far as being "good" I would say they would stay good except for the soggy bread. Yuck!
  • i wouldn't premake them as far as days go.. i would premake them maybe the night before.. that's usually what we do.. right before we go to bed, I go in and make us both sandwiches and get our veggies together or chips (for my hubby) or whatever we're having and fix it all and put it in the fridge. it makes it so much easier..
