Baked Cinnamon Apple Chips
Ingredients
2 small apples, Red Delicious or Gala (sliced paper thin)
1 T. Sugar
1/2 t. cinnamon (or more to taste)
Instructions:
Preheat oven to 200 degrees. Core apples leaving peel on.
Slice whole apples into paper thin rings (I use a mandolin)
Line two baking sheets with parchment paper (not wax paper).
Place apple slices in a single layer on paper; sprinkle with cinnamon sugar mixture.
Bake until lightly browned, about 2 hours.
Cool on wire rack and serve.
Store in a ziptop bag.
Enjoy!

I just made this recipe last week and it is really good. You could probably lean it up even more with a few subs, but the recipe states 130 calories and 1 gm fat per muffin.. not too bad. I used half wheat flour vs all white, but followed the recipe otherwise. Got it off of RecipeZaar.com..great site! My 15 month old LOVES these..I have to stop him at one!
Morning Glory Muffins for the Gym Obsessed
2 cups all-purpose flour
1 cup white sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/4 teaspoon salt
2 cups carrots, shredded
1/2 cup raisins
2 apples, shredded or chopped
3 eggs
2 bananas, mashed
2 teaspoons vanilla extract
Mix first 8 ingredients together in a bowl, mix eggs banana and vanilla seperately. Mix together, into muffin cups. 350 degree for about 20 min.0 -
