Chicken Pasta Salad.

200 g uncooked tricolour or wholewheat pasta
500g/ 1lb 2oz cooked chicken breast, boneless, skinless, cut up
80g can of sweet corn, drained
20 cherry tomatoes whole or cut in half
1 green pepper, chopped
¼ of red onion, chopped
Small handful of whatever fresh or dried herbs you like
Cook the chicken and cut up. Cook the pasta according to the package directions. Put everything in a large bowl and toss!

I got this recipe off of Lorraine and made a few small changes. There is a light dressing you can add to the pasta salad if you wish.
• 1 tbsps Extra Virgin olive oil
• 1 tsp rice vinegar
• 1 tsp light mayonnaise
• 1/2 tsp brown mustard
This changes the calories to 407 per serving!
