Hi everyone!! i'm looking to add something to my Thanksgiving menu. I feel like every veggie I serve is in like a mushy form, in a cassarole, etc. I'd like some ideas for some "crunchy" veggie sides!

Roasted asparagus is awesome. Toss it in some olive oil with a little black pepper and maybe sprinkle some Parmesan cheese, then roast at 400 degrees for 15 minutes. Easy, crunchy & tasty.0

I have never liked Brussel Sprouts, but once I had this recipe I have fallen in love with them.
2 lbs, brussel sprouts, outer leaves removed, cut in half
2 Tbsp. olive oil
lightly salt and pepper
Turn oven to 375, toss brussel sprouts in olive oil and place on cookie sheet. Lightly salt and pepper. Cook about 45 minutes, or until fork with go into them smoothly. Absolutely amazing!0 -
If you can avoid the green bean casserole, how about some fresh green beans al dente, prepared with some toasted slivered almonds. If you must have some "creaminess" maybe mix with some low fat cream of whatever condensed soup.0

The roasted aspargus sounds good. I feel for you...I crave the mushiness at Thanksgiving, especially the mushy oyster dressing!0

I'm from the UK- so we dont do thanksgiving but here are a couple of crunchy side ideas:
- Brussels sprouts with crispy bacon and onions.
- Brussels sprouts with toasted almond slices and sage butter
- Roasted parsnips
- Roasted cauliflower, tossed in olive oil, black pepper & nutmeg
- Garlicky green beans with chestnuts/ hazelnuts
- Asparagus spears wrapped in parma ham/pancetta/smoked bacon and baked until crispy
- shredded parsnip & carrot rosti's0 -

thanks for sharing....I do baked roasted veggies....potatoes and sweet pototoes cook on 350 for about 20 mins sprayed with pam and season with garlic , tarragon , salt and pepper then add sliced zucchini, yellow squash, mushrooms and onion , spray with pam and seasoning and cook for another 20 mins.....YUMMY0
