EASY raw recipes?

I love raw foods, but most seem super involved.
I'd really love to learn how to make raw Italian dishes, but it just looks so complicated!
Anyway, to start out... what good raw recipes do you have, that are really easy for a beginner?

here are a couple, if you have a food processor, doesn't have to be expensive or fancy
curried noodles:
shred 1/2 small butternut squash with the processor or spirooli, or even vegetable peeler
drizzle with olive oil and add 1/4 tsp sea salt
in a small bowl combine 2 tbs shredded coconut, 1/2 tsp curry powder, 1/4 tsp chili powder, 1/4 tsp ginger, add a splash of water to mix
toss mixture into squash
pesto:
6-10 garlic cloves
1 packed cup of fresh basil
1 cup pine nuts (I use pumpkin seeds)
1/3 cup olive oil
3 tbsp lemon juice
1/2 tsp salt
1/2 cup water
mix all ingredients in the processor, add to zucchini noodles (again, processor, spirooli, or vegetable peeler)

Yum! Thanks, sanura! Sounds like tools to cut veggies would make these kinds of dishes a lot easier... a mandoline or spirooli.0
