Microwave Chocolate PB2 Protein Cake

I’m a chocoholic, and I’ve been on the hunt for a yummy high protein snack for a while! I modified a recipe I found on a food blog and came up with something that is high in protein & fiber, easy to make, and delicious!

2 Large egg whites

¼ cup canned pumpkin

1 tbsp unsweetened cocoa powder

4 tbsp PB2

½ tsp baking powder

3 packets of Splenda

Spray a thin layer of PAM in a soup bowl

Mix all ingredients in bowl (Make sure all ingredients are well combined. The batter should be smooth and thick)

Nuke in Microwave for 2:30 to 4 minutes, or until the edges are stiff and the bottom of the cake is cooked.

Makes one HUGE serving. Enjoy!

    It is powdered peanut butter - 1/3 the calories of regular! Its great for shakes and all kinds of stuff!

    Heya that looks yummy :D would the pumpkin be necessary though? I am english and we don't use pumpkin as much here. Also is PB2 protein powder? I'm assuming it is... so could I substitute that with my own chocolate flavour protein powder (MyProtein - True Whey) ?

    The original recipe I took this from used mashed banana instead of pumpkin and coconut flour instead of PB2... I'm sure you could come up with something delicious if you experiment!
