Irish brown bread

Preheat over to 400..rub a little olive oil on pan or a little flour for non-stick..
2-1/4 C. Wholewheat flour
1 C. corn flour
1 tsp. salt
1 tsp. baking soda
1 tsp. stevia or other sweetner
1 T. caraway seeds
1 C. raisins or dried cranberries
2 C. buttermilk
Mix dry ingredients first, then add buttermilk..Mix by hand until well mixed and dough holds together. Form a smooth circular flat loaf that is about 1-1/2' in height, so it will be very flat and wide..
Bake 35-45m..Top will form light brown crust..Remove from pan and cool on cooling rack.
I typically cut mine into 12 slices that come out to roughly:
125 cals per
25g.carbs
4g. protein
1.5g.fat

That is not Brown Bread. It is an abomination. No sane person would put raisins in Brown Bread.
This is a recipe for proper "Irish Brown Bread"
Ingredients
480g Wholemeal Flour
250g Irish white flour or unbleached soft flour (NOT bread flour)
1 teaspoon Bread (Baking) soda
1 teaspoon Salt
0.75 litres Buttermilk or sour milk
Preheat the oven to 450ºF (230ºC/Gas Mark 8). Do not start until the oven is hot.
Method
Put the wholemeal flour into a large mixing bowl and add the sieved white flour, salt and bread soda. Mix well. Scoop out a well in the flour and pour in about ¾ of the milk. With your fingers draw the flour into the milk, mixing them with as light a touch as you can. The dough should come together easily into a soft ball, if it is too dry add a little more milk but avoid allowing the dough to become sticky.
Turn the dough onto a floured board and shape it into a flattened oval about 2 inches high. No kneading is required. Cut a large cross into the surface. Place in the oven immediately.
After 10 minutes reduce the heat to 400ºF (200ºC/Gas Mark 6). Bake for another 30 minutes. Remove from the oven and knock on the base of the loaf – if it sounds hollow it is done. If not return to the oven for about 5-10 minutes more.0 -
Sorta like New England Brown Bread, but we put some molasses in ours, makes it nice and brown. We also bake it in a coffee can!....oh yes, NO RAISINS!! (at least not for me)0

haha Who ever said I was sane?lol I guess that is what you get when you grew up eating Irish brown bread made by an Italian Mom.. I acually forgot to put baking soda and just revised my post..I tried to post a pic with photobucket of my beautiful irish brown bread or the abomination of one but it would not come up..0
