Diabetic Celiac Dessert Recipes?

I belong to a handbell choir that practices every Sunday, and we usually take a break halfway through practice to have a snack and chat about upcoming rehearsals/performances. Responsibility for snack shifts every week, and this week, it's my turn. Our choir director is on a strict gluten-free diet, and one of our other members is diabetic, so trying to come up with a tasty and delicious treat that they can both enjoy is somewhat difficult.

Any recommendations or recipes you can share would be greatly appreciated.
