The big holes in my diet

HI there! So far I have lost 18 pounds. I feel like I am doing really well so far. However, I feel like I'm not getting all the of the foods I need. I have a really hard time eating vegetables, mainly because of their texture, I really can't get through them without gagging and almost throwing up. In my diet now, I eat a lot of whole grain, chicken, turkey, etc. I take a vegetable multivitamin everyday.
I suppose I feel like I'm doing something wrong with my new diet.
Any suggestions for me?

How many different vegetables have you tried? There are so many different types with different textures, you don't like any of them?

Have you tried drinking them? I love the low sodium V-8 juice. How about veggies in soup?

I was going to say the same thing. I don't quite understand how it can be a texture issue when the texture depends so much on 1) the particular vegetable it is and 2) how it is cooked. I mean, steamed, mashed carrots are totally different than raw carrots in terms of texture. There are hundreds of different ways to prepare vegetables, so if you have only had them prepared one way (steamed into oblivion, for example), try roasting them or pureeing into soup, etc.
  • experiment with different vegetables to see if there is something you like, I'm not a big fan of cooked veg but I like lots of veg raw - spinach for example I will eat raw but wouldnt go near it cooked ! and if you really cant face veg then eat lots of fruits instead.
  • Multivitamins and juices just aren't going to give you the same nutritional benefits as actual vegetables. What about cucumber slices? In terms of texture they're a lot smoother than other veggies. Other than that, I'm going to back up what others have said and tell you to keep trying. I wasn't a big veggie person when I started dieting, but I learned to love them. There's some out there for everyone!
  • Tr cooking them differently. I don't like celery, beans or mushrooms. But if they're in a soup, like Progresso's line of light soups, I can't get enough of them. I don't like raw carrot sticks, but cook them in a stew or a roast, I'll eat every one of them! Sometimes you just have to get creative when fitting in foods your body needs. Check out some of the recipies on www.theskinnyconfidential.com - she has dozens of really out of the box meals that are packed full of veggies, protien, and whole grains.

Definitely keep taking a multi vitamin everyday - thats something everyone needs to do. Good luck! xx
