Question about oil

So, I'm back in school. My cafeteria is pretty cool about offering decently healthy dishes, but there is one sticking point for me: their grilled chicken fillets. They aren't drenched in oil, but they definitely have some on them. The caf using a blend of olive and canola, with no trans fats, so it's not the worst of the worst...but I'm neurotic and ocd and worry over little things, and since I like to eat peanut butter, I'm trying to watch the oil.

So, if I use a couple of napkins to squeeze the chicken fillet with (that come off with oil stains), and the chicken looks noticeably less "moist," how much of the oil did I get off? Is most of what was used absorbed into the chicken?

On that new food science show, they dabbed pizza and found that once saturated napkin could hold about 100 calories (1 tbsp) worth of oil. I'd estimate it to be about half that amount for a piece of chicken since there is no cheese for the oil to separate from.

holy crap, that's good to know, a little gross, but very informative!

I know, I was surprised! They were big pieces, like Sbarro sized...probably 2 pieces of normal pizza. But considering most people eat 2-4 pieces, that's a lot of calories saved up.

Good info! We love pizza in my house!

But if I use a few napkins and squeeze the chicken, do I get most of the oil off, or is most of it still in the chicken?

Lol, this is like that Ruins movie, with the vines.

LOL I don't quite see the connection, but that movie was creepy as hell!

Unless they do a nice marinade, it's just going to be on the surface of the chicken. They probably just use a little so it doesn't stick to the pan.

When they realize the girl has a vine growing out of her, and the guy goes "don't worry, I got it out." The girl's like "Nooo, it's still inside me!"

"Don't worry chicken fillet, I got it all off."
"No you didn't! It's still there, waiting to invade your hips!"
    "AAAH!"

Nice to know though! Yeah, it's not marinaded--they preseason it with spices, then throw it on the grill.
