help! gluten/dairy/sugar free crisp/cobbler

Ive never cooked gluten/dairy/ or even sugar free before and i am nervous. I thought itd be easy to find a recipe online; but not so much. i promised my family id come with a gluten/dairy/sugar free berry crisp or cobbler to thanksgiving; but here it is just a couple days away and im lost.
when i had promised my family, i had found one recipe that matched all these requirements and thought it would be a piece of cake, but after going to the store i discovered they didnt have rice flour, sorghum flour, or things of that nature; so i had to ditch that recipe. i was browsing and saw that alot of recipes called for gluten free pancake mix; so i bought that cuz the store did have it. I thought that it would be easy to just convert any recipe to sugar free (replace white sugar for the fake sugar) but worried because alot of the recipes call for brown sugar and wasnt sure if the conversions were the same. then all the recipes i found that have the pancake mix part either have butter, and if they dont have the butter then its high calorie oil and if they dont have the butter then it has the regular sugar. eggs in the recipe would be ok cuz it doesnt have to be vegan, just cant have dairy cuz a cousin is lactose. but the lower the calorie the better.
i know in making cakes, breads, etc, you can use applesauce as a butter/oil replacement; but wasnt sure if it would work for a crisp; if it doesnt work for a crisp, maybe it would for a cobbler? ive never even made a normal cobbler before, let alone a "special" one.
so obviously i need some help from someone who bakes this way; i want to be sure it tastes good and i cant practice with recipes and taste test, etc because i saved just enough berries from summer to make one cobbler for thanksgiving and another for christmas.
ps. using the pancake mix would be awesome since i already bought it and it was expensive and im unemployed. i have the fake sugar already as well; and would probably need to buy a dairy free butter?

use rice flour and soya margarine with sweetener stevia for choice or honey that with a few oats makes a delicious topping0

you may be happier with a cobbler recipe than a crisp recipe. You can make all of your filling replacements. you can make the cobbler biscuts with your batter, or you can get gf bisquick at the store instead. Are you sure your batter is dairy free? Some of those premixes have powdered milk in them.0

I've done a lot of vegan and gluten free baking in the past and might be able to help.
what are the ingredients in the pancake mix?
Earth Balance carries some great "margarine" type spreads that are vegan and gluten free.
the commenter above mentioned Oats - this is a great topping to make a crisp. splenda or stevia with these + cinnamon would be good.0 -

it is a marked gluten free pancake mix, i looked at the ingredients and nothing said milk or dairy in the ingredients; it didnt warn of dairy product. it was $4 for this small bag. is cobbler biscuits? i thought it was just a berry filling covered with a topping?0 -

I'm sure you could swap out the strawberries and rhubarb for whatever berries you have. I know it still calls for brown rice flour or quinoa flakes and other odd ingredients. Do you have a health food store or vitamin shop anywhere in your area? Sometimes they carry these things. Otherwise, Amazon carries any kind of gluten/dairy/sugar free ingredient you can imagine---you might get stuck paying for express shipping this close to Thanksgiving, but it's good to know for the future.
If you have a decent food processor you can make your own almond flour. I can't guarantee it will work, but you could try to use all almond flour in the recipe instead of the brown rice flour.
Also, I love using coconut sugar (sometimes called palm sugar) in recipes. It looks and tastes similar to brown sugar, and I've been seeing it show up more and more at conventional grocery stores.0 -

That does make things difficult for you. I did a quick google search, and it looks like many people use a blender or coffee grinder to make their own brown rice flour.
