Marinades?

I love marinating chicken and turkey. We grill all year round weather the sun is shining or snow is falling from the sky. Store bought meat marinades are EXTREMELY high in sodium. I am looking for some original recipes. I have done the lemon juice, garlic, onion, olive oil thing enough. Anyone have anything different or new?

    italian salad dressing

    yogurt and lemon and garam masala

    soy and seasme oil

    chipotle tabasco plus any kind of fruit jam you like. I love apricot :) ratio about 3:1 of jam to tabasco.

    What about teriyaki
    • 1/2 cup reduced-sodium soy sauce
    • 1/4 cup sake or mirin
    • 2 tablespoons light brown sugar
    • 2 cloves garlic, minced
    • 1 tablespoon minced fresh ginger

    Or Mojito marinade
    • 2 shallots, peeled and trimmed
    • 1/4 cup coarsely chopped fresh mint
    • 1/4 cup rum
    • 1 tablespoon freshly grated lime zest
    • 1/2 cup lime juice
    • 3 tablespoons honey
    • 2 tablespoons canola oil
    • 1 tablespoon kosher salt
    Pulse in your food processor until shallot if finely chopped, add 1 -2 pounds of protein of your choice.... it’s quite nice.

    Rubs are always nice too

    Wine works well.

    I mix up chopped garlic, rosemary and sea salt and stuff it into slits made in the meat. Ginger works well too.
  • Balsamic Vinegar Marinade:
    1/4 cup Balsamic Vinegar
    2 Tbsp. lemon juice
    2 Tbsp. Dijon mustard
    2 Garlic cloves, crushed
    Salt, Pepper
    This is a strong marinade, so I usually marinade my meat for about 2 - 3 hours.

    Any mixture of Spices, Herbs and garlic, depending on the meat or flavor you are going for:drinker: , make a great dry marinade. It does'nt always have to have liquid.
