I'm making these on Thanksgiving, and probably on Christmas as well!

Ingredients:

4 Granny Smith Apples
1 packet instant oatmeal - plain
24 dry roasted unsalted almonds
1 t bsp honey

Core the center of the apples, leaving the bottom whole like a cup. Crush the almonds - suggest placing in a ziplock bag, wrapping in a dishtowel, and flattening with a heavy pan or rolling a jar over them. Mix everything but the apple together in a small bowl and spoon into the apple 'cups'. Bake in a 350* oven for about 20 minutes, or until apples pierce easily with a fork. Let cool slightly and enjoy!

To make a super delicious xmassy version add some raisins, cinnamon, allspice, cloves and a dash of red wine to the filling listed above. Prior to MFP I used to make the 'full-fat' versions of these - i.e. with butter and dark brown sugar, but this winter i'll be making this less calorific version!

I used to make the full fat version myself, but tried these out a few nights ago and they were delicious! I didn't mention to my dinner guests that it was 'healthy' and they all raved about it.
