Please HELP! How to healthily gain weight?

Alright. As I've been working to lose weight, I haven't really noticed my boyfriend's role in it. Or my role in his diet, I should say. I cook a lot for the two of us, and he's naturally very skinny as is. I don't mean slim, I mean SKINNY. He easily weighs 120 pounds and is 5'10", 21 years old.
Mostly I'm wondering...if I'm going to be cooking, how/what can I cook that will suit not kill my diet and also not starve him to death? I'm getting really worried about him. I almost always cook breakfast, and often cook dinner. I'm not opposed to giving him leftovers for lunch. I know it isn't really my problem, but I'm worried!
AND to make matters more complicated...he's allergic to all gluten products
Please help!

I'm curious about this too. My hubby could stand to gain about 20 lbs, the hotdog & beer diet isn't working!0

Add cheese to his. Give him double portions. Buy him nuts, snacks you don't like. Fatty salad dressing for him. I often cook fatty sides (noodles, taters, etc) for my kids and husband and then I just have the meat and salad.0

If you are preparing healthy foods with good carbs, good fats and plenty of protein he should be eating the same things that you are, only larger portions. Healthy food is healthy food.0

He needs to eat more calories than he burns.0

Cook him the same but give bigger portions than you give yourself, especially on things such as pasta/rice/meat etc.
Add butter to his veg.
Add cheese to things that taste nice with cheese on.
Give him nuts as snacks
Also, if you're are cooking in oil (and don't mind the extra washing up) cook in different pans so you can use more oil for him.0 -
The short answer is - increase his calories, give him more food.
Make dinner and feed him double what you eat. Or make a meal that can be lighter for you but you can add calories to his like make soup or chili and add 2% or full fat cheeses, sour cream, add rice or roasted potatoes to a protein and veggie meal. I often will make a meatless dinner for me and then add some sausage or chicken to my husbands plate. Pasta - white or whole wheat is also calorie dense for him. Make sandwiches and paninis and make his with more meat or cheese, etc.
Also, try to get him to snack during the day on things like nuts, make him PB sandwiches, or even a Clif Builder Bar wold work.
I have the same problem feeding me and my husband - the bottom line is that he just gets to eat more than me so sometimes he gets to eat reduced fat potato chips, and extra side dishes at dinner, and larger sandwiches, and sometimes I make him a nice dessert out of some frozen yogurt and whatever toppings I have around.0 -
As stated above, larger portion sizes of higher calorie yetr healthy foods.
Beans
Lentils
Nuts
Nut butters
Hummus
Gluten free pasta/pizza
As for cooking you can do a whole chiken, he has the darker meat nd you have the breast.0 -
No gluten diet is really high in calories. I went to a no-gluten shop recently, and was amazed at how high the calories were. There is a no-gluten group on MFP that you might like to join to get more info.0

Good suggestions above (bigger portions, additional snacks and things added to foods to give him more calories). You could also get him on MFP so he can figure out how many calories he needs to maintain or even gain weight (there is an option for gaining as well as weightloss) and he could use it as a guide to figure out how much he should really be eating. And if he wants to put on muscle as opposed to just gaining fat, he could get in the gym, maybe with a trainer, definitely with weights. Lots of people here have amazing insight into healthy weight gain.0
