Chicken Vegetable Soup

I am always looking for low calorie filling foods and this one is easy and can be done before you leave for work and it will be ready when you get home. I like pairing it with homemade yeast rolls - last time I made the girl who ate everything lion house rolls and they ended up being close to 100 calories a piece. The last time I made this soup each serving was 160 calories so with the rolls I was still under 300 calories! This is going to depend on what you like and what you throw into this soup.
Chicken Vegetable Soup
Cook in skillet:
1 small onion
Green,red, or any pepper
Minced garlic
1 tsp olive oil
Once tender add this to crockpot along with:
1 Can of Chicken broth -(I use low sodium/fat free)
3 chicken bullion cubes and water (or more chicken broth)
Shredded chicken or canned chicken (I usually use about 2 cups of chicken)
Mixed veges
1 can of tomatoes with juice
Corn,green beans, celery (whatever I have on hand)
2 Idaho potatoes
Kosher salt
Cayenne pepper
Sprinkle Accent and Shoupes seasoining for added flavor
Cook in crockpot. I put it on high if we are eating if for lunch or low if it will sit all day and we will be eating it for dinner.
Another trick I use as well is I cook a bag of chicken in crockpot and when it is done cooking I put it in a bowl while still warm and use an electric mixer on it. Shreds the chicken perfectly in seconds! Then I bag this up and freeze for quick meals.
