protein pancakes
I love these for breakfast. You can add a little cinnamon or Splenda for taste. I also sometimes throw in some flax seed because of the health benefit. They have a good balance of carbs and proteins, plus they give you some fiber to start your day. I top with 1/4 c of frozen or fresh blueberries, sugar free syrup, and sometimes a small portion of walnuts to get more MUFAs. This will make you two good-sized pancakes. They take longer to cook than regular pancakes...don't try to flip them too soon or they will fall apart!

Ok, now I have to share my recipe!
Pumpkin Spice Pancakes
1.5 cups oat flour
1/2 cup pumpkin
2 TB sugar (or can use splenda)
1 TB baking powder
1/2 tsp salt
2 TB ground cinnamon
.25 tsp ground allspice
.25 tsp nutmeg
1.5 cups vanilla almond milk
4 egg whites
2 scoops vanilla protein powder
Makes 12 pancakes (or waffles if you put in a waffle iron)
Each pancake has 98 calories, 13 gm carb, 2 gm fat, 7 gm protein, 2 gm fiber
Delicious as is or can serve with a drizzle of real maple syrup! Yummmmmmm!0 -

Love protein pancakes! I usually do:
1/2 cup oatmeal, dry
1/2 cup cottage cheese, 1%
2 or 3 eggs
1 tsp vanilla
2 tsp cinnamon (i love cinnamon and gives them a little color, too)
i make these and no one knows i am serving them super healthy pancakes! so easy and only THREE key ingredients!
can also add a bit of peanut butter = )0 -
