Cauliflower Mashers

I made these in advance tonight to take to Thanksgiving. I thought they would be a good alternative to mashed potatoes

2- 16 oz bags frozen Cauliflower Florets
1 - 5.2 oz box Boursin garlic & fine herb gournay cheese (in the specialty cheese isle)
2-3 Tbsp butter
Chicken Stock
Sea Salt
Ground pepper (black or white)

Microwave cauliflower 15 minutes (or more) until veges are very soft. Do not add water and drain off any excess liquid.
Add butter, 1/4 cup chicken stock, and 1/2-3/4 the boursin cheese. Using potato masher chop, mix the butter, stock and boursin cheese into the cauliflower. You can also use a hand mixer if you have a big bowl, otherwise, the potato masher will work. Continue mashing until mixture is like lumpy potatoes. Continue mashing until you get desired consistency. Add sea salt and pepper to taste.

This can be made ahead and reheated the day of - you may add a bit of extra chicken stock to keep it moist.

    I am a deli manager and have that cheese in my deli...it comes in low fat, so you can lower your fat just a bit in that recipe.

    That sounds really good. I don't really like potatoes, so that would be a nice alternative for me.

    Sounds yummy!

    Just FYI - you can lighten any mashed potato recipe with pureed cauliflower. Been doing that for years to get extra veggies into the kiddos. Not sure exactly what percent you will really begin to taste it. I love cauliflower so it doesn't matter to me but I am the only one in my family that does. hehehe

    I did not know there was a low fat version of boursin cheese. Will have to see if it's as tasty as the original, and would help to lower the calorie count. You can always skip the cheese - I just think it adds a lot of flavor - maybe some garlic powder instead would compensate or some herbs. The possiblilities are endless!!!! :-)
