pesto pasta with roasted balsamic tomatoes

I made this up tonight and was shocked at how tasty it was!

SERVES 2

150g wholewheat spaghetti
6 vine tomatoes
11/2-2 cloves of garlic (depends on your own tastes)
3/4-1 tablespoon balsamic vinegar (again depends on personal taste)
47g red pesto


preheat oven to 180C
cut tomatoes in half and place on some baking paper in a baking tray
mix 2 crushed cloves of garlic with 3/4 tblsp balsamic vinegar
pour the mixture over the tomatoes and place in oven for 15mins

Whilst the tomatoes are roasting cook spaghetti

Once all are cooked toss the drained spaghetti in the pesto and add the tomatoes and any juices left over

Serve with large side salad or garlic bread

YUM!!!!

  • What's the difference in red pesto and the green stuff? I hate the green stuff! :sick:

    Green Pesto is made with basil, parmesan cheese, pine nuts garlic and olive, Red pesto is made wth sun dried tomatoes, pine nuts, garlic and oil.

    I love both!:smile:
  • I haven't tried red pesto yet...will look and see if I can find it. If not, I will make it myself...probably better to do so I can limit the oil in it. This sounds really good!

    You could make it with green pesto too. I just happened to have red in the cupboard :smile: . I normally make my own green pesto with 2 bunches fresh basil, 1 crushed garlic clove, 2 tbspns fat free fromage frais and 1 tbspn grated parmesan. You can add pine nuts in there too if you like :o)
