Fiber! Plus it is closer to the whole grain so it contains more nutrients. Plus it tastes way better.

Steel cut has more fiber and is a true whole grain. And it tastes incredible!!!

I agree that they taste better! I tried steel cut oats for the first time a few weeks ago and I LOVE them! I can't believe I've been missing out all this time. :)

Actually, oats are the one place where both options are actually the whole grain. For the quicker cooking oats the grain has been flattened (but is still present) and with the steel cut oats the whole grain has just been cut into bits. There is more surface area exposed with the quick cooking kind so that is why it cooks faster. But typically both are whole grain. However I find steel cut oats to be chewier and is a better texture for me so I like them a lot more.

I put chopped walnuts, raisins, apples and cinnamon in mine and let all that cook in. SO good!!! I also just found some mixed dried fruit (cherries, blueberries and cranberries) that I'm going to try this week.

It's how their processed. Steel cut are sliced only a few times which produces larger particles which take longer for the body to break down. Quick are cut more, streamed and rolled which translates into quicker absorption and obviously quiker cooking time for convenience. As far as fiber is concerned they have the same as far as weight is concerned but most people use a measuring cup and steel cut are more dense which produces more nutrients, calories and of course more fiber. For example a 1/2 cup of quick oats is about 150 calories and 1/4 cup of steel cut is 150 calories.
