Pumpkin Fluff
8 servings -50 cal without crust
1 3/4 cup canned pumpkin
4 serving fat free sugar free instant vanilla pudding & pie filling mix
6 oz Cool whip lite whipped topping
2 tsp. pumpkin pie spice
mix well, can "frost" with lite cool whip and sprinkle nutmeg on top.
you can serve in wine or parfait glasses. i've also put in a reduced fat graham cracker crust and served as a pie. it's more of a pumpkin mousse and is sooo good.

you can make Pineapple Fluff too, can of unsweetened pineapple, drained instead of pumpkin ......make sure you use the puddlng mix dry...do not mix with milk. can put in the blender too to whip up - easy and low calorie :-)
also with the pumpkin, use Pure Pumpkin, not pie filling ... enjoy! (i add cinnamon and nutmeg on top)0 -
