Pumpkin bisque

OK, I went to a ladies luncheon y'day and one of the ladies made this. I HAD to get her recipe, it was wonderful!!!!!!!! I'm making it tonight for my family. :bigsmile: And believe me, I never would have thought of pumpkin and gouda cheese together?? :huh:

4 strips bacon, chopped
1 medium onion, chopped
3 garlic cloves, minced
6 cups chicken broth
1 (29 oz) can solid pack pumpkin
1/4 tsp. ground nutmeg
1 cup fat free half and half (originally calls for heavy whipping cream)
2 Tbsp. minced parsley
1 cup shredded Gouda cheese


In Dutch oven, cook bacon over medium heat. Drain on paper towels. Saute onion in drippings and add garlic, cook 1 minute longer. Stir in broth, pumpkin, salt, nutmeg, and pepper. Bring to a boil. Reduce heat and simmer 10 minutes. Cool slightly. In a blender process soup (or use immersion blender). Return to pan, stir in cream (or half/ half), add cheese and keep on low until heated through.

Bacon - Oscar Mayer Bacon, 4 cooked slices

Onions - Raw, 1 medium (2-1/2" dia)

Kroger - Smoked Gouda Sliced Cheese, 8 slice
