Last night, I had the biggest sweet tooth... I was going through the kitchen like a bear VS a bag of doritos. Living in a house with people who don't get as healthy as I do, I had to make something everybody could like. That's when I found a recipe for Vanishing Oatmeal Raisin Cookies... I had no raisins, but everything else was stocked; great. I made these baby boys, and hot damn we're they good. Chewy, although I like crunchy cookies better... they we're amazing! Sweet, soft and just 85 calories each. WINNING.

Here's the recipe...

4 tablespoons of butter, softened
4 tablespoons of light brown sugar
1/8 cup of pure cane or granulated sugar
1/2 of an egg
1/4 teaspoon of vanilla
6 tablespoons of all-purpose flour (you might can use whole wheat flour, I'm not sure)
1/4 teaspoon of baking soda
1/4 teaspoon of ground cinnamon
3/4 cup of Quaker Oats (quick, or old fashioned, uncooked)
1/4 cup of raisins (I didn't have any)

Opt.. ripen banana slices, granola, chopped almonds, etc..

1. Heat oven to 350F.

2. In a large bowl, beat butter and sugars on a medium speed of electric mixer until creamy. Add eggs and vanilla, beat well. Add combined flour, baking soda, cinnamon; mix well. Add oats and raisins; mix well.

3. Drop 1 rounded TABLESPOON of dough onto ungreased cookie sheet. ****

4. Bake 10 to 12 minutes or until light golden brown.

5. Cool 1 minute on cookie sheet; remove to wire rack. Cool completely. Story tightly covered.

6. Don't share.. kidding, ha.
