The Lunch time blues!

Okay, Does anyone else ever go, I know what I want for breakfast! Then make an awsome healthy breakfast, then when lunch comes around your stumped! It's sort of depressing it's like lunch time comes around and I am just hoping I don't mess up my whole day!

I cannont think of one healthy thing to make for lunch, Ah I need help! Ideas please?
What are your favorite lunch time meals, that are healthy?

    Today I had a sandwich on Rudi's multigrain bread with 1 teaspoon dijon mustard, 1/4 cup shredded mozzarella, and 1 oz leftover white meat turkey breast. I pan-grilled it with olive oil spray. On the side, I had a few campari tomatoes, and for a "sweet treat," I had half a homemade protein peanut butter cup! All for 350 calories.

  • I like to keep Xtreme Wellness High Fiber tortillas on hand. I will put whatever meat I have (tuna, chicken, whatever), some spinach, and a dressing of some kind in there, roll it up, and yum!

    Lately, I'm on a sweet potato kick. They're so good, filling, and vitamin packed.

    Also, just a big salad-I like my salads with spinach, grapes, some berries (raspberries, blackberries, strawberries), almonds slices, chopped red pepper, and a little bit of vinaigrette dressing.



    And I agree... the protein PB cup sounds pretty amazing...
  • This is what I am making for dinner, but you could just as easily have it for lunch: leftover grilled chicken breast on a bed of fresh spinach, kale, and arugula, with sliced kiwis, walnuts, whole flax seeds, red onion, and cilantro lime vinaigrette.
    Vinaigrette: 2 tablespoons finely chopped fresh cilantro
    3 tablespoons red wine vinegar
    2 tablespoons olive oil
    1 teaspoon grated lime rind
    2 TBS lime juice
    1/8 tsp ground coriander
    1 teaspoon fresh minced garlic

    Whisk all ingredients together.

    I am also a big fan of pita pizzas:

    whole wheat pitas
    extra virgin olive oil
    2-3 roma tomatoes, diced
    1 medium yellow onion, diced
    1 red bell pepper, diced
    1 yellow or orange bell pepper, diced
    1 green bell peppper, diced
    black olives
    fresh spinach
    3 cloves garlic, minced
    fresh basil, torn
    1 TBSP Mrs. Dash Extra Spicy
    2 TBSP fresh grated parmesan
    1/2 c part-skim mozzarella cheese

    Combine tomatoes, onion, peppers, black olives, parmesan, garlic,and Mrs. Dash.
    Preheat oven to 425 degrees. Leave pitas whole. Rub 1 tsp olive oil onto each pita. Place spinach leaves and torn basil onto pitas. Top with veggie mix and mozzarella. Place onto baking sheet and bake until edges are crispy and cheese is bubbly, 15 - 20 minutes.

    i usually have some kinda of protein (chicken, pork or lean beef), frozen edamame/vegetable and some sweet pottaoes or rice. works really well for me and I can prep it before hand. Just grab and go to work.
