Delicious Stir Fry Recipes

I made a delicious veggie & shrimp stir fry last night to save for lunch today..

I used portabella mushrooms, zucchini, baby spinach, tomatoes, white onion, shrimp, 3 garlic cloves and less than a tablespoon of EVOO and a dash of pepper.

I basically cut the zucchini, mushrooms, onion, tomatoes into small slices.
- sauteed the garlic in EVOO until a bit brown
- then added the onions, zucchini, tomatoes, mushrooms.. stir fry for about 1-2 minutes..
- then added the shrimp, spinach & mushrooms last.

It only took me 10 minutes in total to make!! It was SO good and only 323 cals - carbs all coming from the veggies! Just thought i'd share :)


And does anyone have any other delicious - healthy stir fry recipes?

  • I have recently fell in love with stir fry!
    Last week I made stir fry veg with chicken breast & chilli noodles :D.

    I basically do the same thing you did, I just continually switch out the veggies and meat. I swap between chicken & shrimp for stir fries. Also, adding a low cal/low sodium sauce can completely change the taste so the taste doesn't get boring.
