Got any healthy recipes for leftover turkey?

Hi all,

I would love to get your ideas on what to make with my leftover turkey. I have been trying to think of some healthy soup ideas to use it with but I would love more ideas. Feel free to provide links :smile:

    To use all of it make a good turkey stock out of the carcass. We tend to make 3 litres at a time (chicken) - one gets changed into chicken soup and the other two go in the freezer ready for the many other soups I make.

    I always end up with leftover smoked turkey legs after the Renaissance Faire (they usually go on sale the last day & the performers like me buy bags of them for half price...). I freeze them & then use them a few at a time in soups. Just throw in your leftover turkey, a can of cream of celery, some sage & hickory salt (to taste), some water or broth or leftover gravy, and whatever veggies you have lying around. Carrots, celery, cauliflower. Simmer it in the crock pot all day long & it's wonderful.

    I made my stock yesterday from the carcass. It is just waiting for some great soup ideas. I may google chicken recipes and just use my turkey in lieu of that.

    Unless you froze it the turkey should be tossed by now..

    I cooked the turkey yesterday, it is fine for another day. Good point though...

    I used the broth from the carcass and a little bit of meat and cooked it in a pan with egg noodles
    I also made turkey tikka masala with a jarred tikka masala sauce

    Turkey, turkey broth, whatever veggies I have on hand, whatever herbs look tasty....simmer awhile and it's low-fat, low-carb, low-cal, nutrient dense soup! I've never used a recipe, just whatever looks good or is available at the moment. It's never boring this way lol.
