CANDY CANE CHOCOLATE WHOOPIE PIES
CANDY CANE CHOCOLATE WHOOPIE PIES
per serving( 2 pies) 230 cals, 2g protein, 10g total fat ( 6g sat. fat), 40mg cholesterol, 33g carbohydrates, 1g fibre, 25g sugars, 180mg sodium.
1 cup all purpose flour
1/4 cup cocoa
1 tsp baking soda
1/2 tsp salt
3/4 cup & 2 tbsp milk, divided
1 tsp vanilla extract
1/4 cup unsalted butter, room temperature, divided
1/2 cup brown sugar
1 egg
1/4 tsp pure mint extract
2 cups icing sugar
3/4 cup crushed or chopped candy canes.
1) Preheat oven to 350F. In a bowl, sift together flour, cocoa, baking soda & salt. Set aside. In a measuring cup, stir together 3/4 cup milk & vanilla. Set aside.
2) Using an electric mixer cream together 1/4 cup butter & brown sugar until pale and fluffy, 3 to 5 mins, then add egg. Reduce to low & alternately add portions of the dry ingredients & milk mixture, occasionally scraping down sides of bowl, finishing with dry ingredients, beat just until a smooth batter forms.
3) Using a tbsp, portion out level spoonfuls of batter and place mounds, spaced about 1 1/2in apart on 2 parchment paper-lined baking sheets. Bake for 11mins, rotating baking sheets halfway trough. Transfer pires to a wire rack & cool completely.
4) Meanwhile, make the filling. Using the mixer, whip remaining butter until fluffy, then add mint extract & remaining milk. With the mixer on low, gradually add icing sugar, occasionally scraping down sides of bowl. Beat until fluffy, about 4 mins. Cover & set aside.
5) Fold 1/4 cup crushed candy canes into the filling. Sandwich level tbsp of filling between 2 pies, spreading to the edges. At this point, they can be refrigerated overnight in a parchment paper-lined airtight container, before serving, dab filling edges into remaining candy cane & lightly pat pieces into place. Transfer to a platter & serve immediately.

OK - silly question. I'm getting ready to make these and I'm confused. The ingredient list shows 1/4 cup butter. Step 2 says to cream together 1/4 cup of butter and the brown sugar. Step 4 says to beat the "remaining" butter. Is the ingredient list incorrect - should there be more than 1/4 cup of butter? Or are the instructions incorrect - step 2 should use less butter?0
