Baked Zucchini "Chips"

Not really a recipe more of a suggestion.

I LOVE fried zucchini and eggplant....not the healthiest...
I have found a yummy alternative....

Slice zucchini/eggplant into slices (the thicker they are the longer it takes to cook)
Coat with egg/egg whites
Coat with seasoned bread crumbs/seasoned Fiber One crumbs

Place on a sprayed cookie sheet.
Bake in a preheated oven at 400 degrees until tender, flipping occasionally.

SOOOOOO..... good.
