I use my crock pot to slow-cook chicken breasts (bone-in or boneless) so I can shred the chicken and use it throughout the week for wraps, chicken salad, salads with chicken, casseroles, over pasta, etc...0

like said above, skinnycrockpot.com has awesome recipes. Also, i use my crockpot A LOT (i get home late and dont like having to cook when i get home) during the winter. I post a lot of my recipes in my blog here on MFP. As of right now i dont have a lot of crockpot recipes in there yet (as it's just now starting crockpot 'season') but feel free to check them out, i post stuff there occasionally, i'm going to try to post all of my crockpot stuff there soon.

Fiesta Crock-Pot Chicken
4 boneless, skinless chicken breasts (can be frozen)
1 can corn
1 can black beans - rinsed
1 jar salsa (your favorite kind)
Put ingredients in crock pot. Cook on low 4-6 hours (sometimes, I go longer if I'm at work). Serve with rice, tortilla, or chips. Also good with a little shredded cheese.0 -
Sausage & Kale Soup ( approx 117 cals per serving )
Ingredients:
1.5 pounds bulk Italian sausage (we use turkey)
1 14.5-ounce can diced tomatoes, liquid included
2 14.5-ounce cans Bush's white beans, drained
5 to 6 cups chicken broth
4 cloves minced garlic
5 cups kale greens, chopped
Cooking Directions:
Brown turkey and garlic together and drain excess grease.
Place in large 5 to 6-quart crock-pot.
Add beans and tomatoes.
Add chicken broth until completely covered by at least a half inch. Stir thoroughly.
Add kale and fold in until kale is completely moist. Cook on low approximately 6 to 6.5 hours or until kale is tender. Makes approximately 8-10 servings.0 -
there is a website that's called somwthing like 365 slow cooker recipes or similar - google it and it has tonnes to choose from.
I made one two days ago. Just put pork chops on the bottom, then a jar of saurkraut over the top. turn it on and walk away. It's actually a lot nicer than it sounds!!0
