Healthy french fries do not exist. If it's not fried, it's not a fry. However, par-steamed rutabega sticks flash roasted at 500 are pretty good. But they are not fries.0

Take some good russett potatoes, slice them into thin wedges, throw in a Ziploc with 1 tbsp olive oil + spices (I like Old Bay), toss in an oven (preheated) at 400 degrees on a cookie sheet covered in aluminum foil (easy cleanup), bake until crisp.0

Try making them from sweet potatoes! Sweet potatoes are loaded with nutrients and are lower in calorie. Bake them instead of frying them to cut back on calories & fat.0

I should add that I can't stand sweet potatoes in any form LOL0 -
baking that is what it is! Thank you! I knew there was another way to cook them so that they were not fried!
And experiment with different flavors. I like my garlic fries but you can use whatever spices you like. Jjust toss the wedges (or sticks) in a small amount of olive oil and some garlic powder, a little bit of paprika, old bay, chili powder, even parmesan cheese. Be creative and have fun.
EDIT: I was writing this when you posted about your dislike of sweet potatoes, so ignore that part :glasses:0 -

thanks everyone I am trying to find meals that we can all eat together instead of me making meals for different people all the time. I have a son that is VERY picky eater and my daughters are pertty good about eating just about anything0

If by healthier you mean less fat then, toss your regular potato fries in EVO and bake until crispy brown. Personally I don't think deep fried anything is unhealthy per se, other than using the wrong oil for deepfrying.0

I made over roasted fries last night, the key is to use duck fat or bacon fat to get them nice and crispy0

You can do a swap out:
(Taste better than Sweet potatoes)
http://www.cookingchanneltv.com/recipes/lisa-lillien/bake-tastic-butternut-squash-fries-recipe/index.html
1 butternut squash (large enough to yield 1 pound once peeled and sliced)
1/8 teaspoon coarse salt, plus more, optional
Directions
Preheat the oven to 425 degrees F.
Peel squash with a vegetable peeler. Slice the ends off the squash, and then cut it in half width-wise. Cut the round bottom piece in half lengthwise and scoop out the seeds.
Using a crinkle cutter or a knife, carefully cut squash into spears or French-fry shapes. Thoroughly blot moisture away with paper towels, and sprinkle evenly with salt.
Spray a broiler pan, a baking rack placed over a baking sheet, or a baking sheet with nonstick spray, and then place spears flat on it.
Bake in the oven 20 minutes, and then carefully flip spears. Continue to bake until tender on the inside and crispy on the outside, about 20 minutes longer.
Serve with ketchup for dipping, if using. Enjoy!

OMG it was awesome. I tried the 2 respices in this thread AND my family LOVED it as well. Troy even had 2nds! ( if you know my son getting him to eat anything is huge)
Everyone loved it and had 2nds! The food was GONE! HAPPY HAPPY Family!0 -

Rutabaga fries are my one of my faves! I stick mine in the oven with olive oil at 350, though.0 -
AWESOME! I'm going to try it one of these days too. Thanks!0

Bake them in the oven with some really good seasonings like thyme, garlic, rosemary, salt.0

My Mum just bought an Airfryer. You cut up potatoes (I rather sweet potato) and it only uses half a tablespoon of oil.. Otherwise just do the same method and bake with spices. I love Cajun0

Eggplant fries are good! They aren't really fried.
Just cut up an eggplant into whatever shape you want. Fry shapes are pretty good. Then, dip it into some egg. Dip it in breadcrumbs. Then bake until golden brown. They are so good! They give you a similar texture as french fries, but they are a little less scary. I like to dip mine in a home made marinara sauce.0 -
Baked french fries. Yummy.0
