Hi guys, im kind of addicted to my banana bread at the moment and seem to have found a winning combination! its delicious, easy to make, filling and quite good for you. I get 10 large slices out of it and with some low fat margerine on here is the nutritional info (the bit you all want to know... lol)
Cals: 207.
Fat: 8g
Sat Fat: 0g.
Carbs: 27g.
Protein 3g.
Sugar 10g.
You can change the fruits in it but here are my ingredients for the above facts...
4 medium bananas.
0.5 tsp Baking powder.
1tsp baking soda.
150g Plain Flour (1.5 cups)
40g Walnuts.
40g Cranberries (dried)
200ml skimmed milk.
1 medium egg.
20g sugar.
4g candarel sweetner.
2 tbsp olive oil. (or canola)
Method:
1. Mash 4 bananas.
2. add into the bowl... oil, walnuts, cranberries, milk, egg, sugar and sweetner, baking powder, baking soda. mix well with a fork.
3. add in 150g plain flour / 1 1/2 cups. Mix it in until its all wet. don't over mix though.
4. pop it into the oven for 50 mins on 170.
5. insert a tooth pic if it comes out clean its ready, if not cook a little longer.
you can eat it hot or cold. i prefer it cold, it slices easier too. this is a fab desert with custard and quite healthy if your having a dinner party etc. it makes a filling breakfast and dinner and is great after a work out! enjoy! x
