Rhubarb and Apple Meringue.

Serves 4 (huge serves too, as in a whole cereal bowl full!, could actually divide into 8 if you aren't as greedy as i am)

2 apples (i like pink lady), pealed, cored and sliced finely. Avoid green apples as these might be too sour.
1 whole bunch of rhubarb, leaves removed and chopped into small pieces
1/2 cup water
3 egg whites
pinch of cream of tartar
1 tbs white sugar

1. In a saucepan stew apple and rhubarb with water on medium heat until it is nice and soft. Spoon into some kind of ceramic dish. I used a square one that was about the same length+width as a dinner plate.
2. Whisk with an electric beater egg whites with cream of tartar until soft peaks form. Add sugar while still beating and keep beating until stiff peak stage.
3. Spoon over fruit. Put in medium oven for about 15 mins or until meringue starts to go slightly golden and is set.
