Shrimp Burrito
Single Serving, 1 burrito
(pescetarian, dairy)

Ingredients:
1 Flour Tortilla
5 Frozen Shrimp, thawed and tails/shell removed
1 small onion, sliced thin
1 small zucchini, sliced in think medallions (bell pepper or yellow squash would be a substitute)
1 tbsp Daisy Light Sour Cream
1 clove garlic, finely chopped
2 tbsp fresh salsa
½ cup white rice, cooked
¼ cup cilantro finely chopped (or to taste)
½ tbsp olive oil
A pinch of cayenne & cumin & chili powder
¼ cup cheddar cheese, shredded

Cook:
- Heat oil in a medium sized frying pan over medium-high heat. Add onions, shrimp, zucchini, garlic, cayenne, cumin, and chili powder. Cook until zucchini is soft, then remove from heat.
- In a separate bowl mix the cooked rice and cilantro. (Throw in some lime juice if you have it.)

Assemble:
1. Tortilla shell
2. Rice
3. Shrimp & Veggies
4. Cheddar Cheese
5. Sour Cream
6. Salsa
7. Wrap it & Eat it
