Simple Mushroom Stroganoff

Mushroom Stroganoff
Serves 2
(Vegetarian, dairy)

Ingredients:
1 lb mushrooms, cut into quarters (I usually use button or baby bellas)
1 medium sized onions, sliced to ¼” thickness
1 tbsp tomato paste
4 tbsp Daisy Light Sour Cream
1 cup vegetable broth
1 tbsp olive oil
2 cups cooked egg noodles
Pinch of thyme
Pinch of paprika
Salt & pepper to taste
Fresh parsley, to garnish


Cook:
-Heat olive oil in a deep skillet over medium heat. Add onions, garlic, mushrooms, thyme, and paprika.
-When onions begin to soften, add tomato paste, sour cream, and vegetable broth. Stir thoroughly. Simmer for 8-10 min on medium-low heat to thicken sauce.
- Remove from heat and add salt and pepper to taste.
- Serve noodles in a bowl with the mushroom stroganoff ladled over it. Garnish with fresh parsley.
