Low cal protein cheesecake truffles!

Or whatever you want to call them. I don't have a clever name xD
Ingredients:
1 CUP of cream cheese (I used fat free)
1 CUP of protein powder (I used Optimum Nutrition Chocolate Malt)
1 CUP of Rice Crispy Cereal
1 egg
1 tbsp flour
1/2 tsp vanilla extract
Stevia to suit your taste
Baking chips (optional)
1 - Preheat oven to 350 degrees
2 - Mix all ingredients in a medium sized bowl, making sure to fold in crispies. Save baking chips for later
3 - Using a mini muffin pan (or full sized) spoon out even portions into greased muffin cups
4 - Add baking chips to top of truffle cups
5 - Bake for 10 minutes
Enjoy!

Had to taste test them :] I thought they were really good! I like mine a little bitter, so that is why i didn't put an exact amount on stevia.

I was just going to ask if the calories count was for regulas sized ones or the minis. They do sound great and I think it is something my entire family would love.0 -
