Mixed Berry Baked Oatmeal
Mixed Berry Baked Oatmeal
3 cups old-fashioned oats
1/4 cup packed brown sugar
1/4 Cup Ground flax seeds (optional)
3 TBS whole chia seeds (optional)
2 tsp baking powder
1/2 tsp salt
2 egg whites
1 egg
1 1/4 cup unsweetened almond milk
1/4 cup olive oil
1 tsp vanilla extract
1 Cup mixed frozed berries (raspberries, strawberries, blackberries,blueberries)
1 cup fresh or frozen blueberries
1/3 cup sliced almonds
1. Combine oats, brown sugar, almonds,chia seeds, ground flax seeds, baking powder and salt in a large bowl. Whisk the eggs, almond milk, oil and vanilla; add to the dry ingredients and stir until blended. Let stand for 5 minutes. Stir in berries ( I used a cup of each because I had them on hand.).
2. Transfer to an 11 x7 inch baking dish coated with cooking spray. Bake, uncovered, at 350 degrees for 35-40 minutes or until top is lightly browned (internal temp 160).
Makes 9 servings with 241 calories, 12 g fat, 43 mg sodium, 31 g carb, 6 g fiber, 6 g protein.
First try at baked oatmeal and it tastes great.
