Weekends throw me off!

But NOT in the way you might be thinking - and I'm wondering if this "reverse weekend problem" happens to anyone else.
I find on weekends I actually eat LESS than I would during the week, and sometimes I find I can't eat enough food!
For example today - I woke up after sleeping in a little bit, grabbed half a banana and was out the door to go to a spinning class @10am. After spin class I did a few errands and got home to do some chores, put lasagna rolls together for dinner and had half a sub which I gobbled down to be out the door again to a movie. I ate smart snacks, came home to do more chores/things around the house and had dinner.
I've logged all my calories for the day and I'm barely at 1,000! I burned off 500 this morning at spin class, and I still have to go out and play hockey which will burn another 200-300. According to MFP I should eat more - but really I'm not hungry. I don't want to go eat crap to "up" my calories, but should I worry if I do this on a pretty regular basis every weekend?
Maybe I'm just b*tching and complaining about something silly such as not having enough time to eat and working out too much on weekends? :laugh:
