i just mix a splash of olive oil with about 1 tbsp. of balsalmic or red wine vinegar and a couple craks of fresh ground pepper. it's good and goes on pretty much any salad.

This is what I make all the time. Often I'll add some oregano and crushed garlic.

Or you can just spritz some fresh lemon juice over you salad as well.

I usually use a little drizzle of olive oil and a splash of lemon -- great with good, crumbled cheese
  • I don't care for purchased salad dressing recipes either. However I am addicted to Trader Joe's Pear Gorgonzola - a naturally lite dressing with (I believe) 45 calories.

You can make any homemade dressing lite by substituting water or fruit juice or vegetable juice in place of 1/2 the oil (if you look at the ingredients on the bottle of lite dressings you will see that this is what most manufacturers do to make their dressings lite). I think the dressings taste better this way - not as oily. And up the vinegar to oil ratio a little to lower the calories even more. Try doing this with any homemade oil & vinegar type dressing (or oil & citrus). Also, try substituting low fat plain yogurt for some of the mayo or sour cream in the creamy homemade dressing recipes.

I make my own salad dressing. You can mix up the spices to how you like it but the basic one I make is:

    splash of olive oil
!/2 lemon squeezed ( or to taste)
    1 cloved crushed garlic
    1 green onion finely chopped
    A little S&P ( if you like)

MIx all that together then add Kefir until you hit a consistency that you really like.

Or for a change I make:

    olive oil
    lemon
    garlic
    chili powder
    cumin
    S& P
MIx all ingredient to taste. Also good on fish when baking/broiling it.

I don't like them either. I found one that is really simple and surprisingly I love it.

    Splash of Olive oil
    Splash of vinegar
A dab of Garlic ( I buy the Gourmet Garden in the tube)
    a dab of mustard
    S&P

Wisk all together. I estimate when I make this sorry I don't have the measurements LOL

Just google the words healthy salad dressing and you will get more recipes than you can try in a month.
  • I love ranch and refuse to cut it out of my diet completely, so I buy the Hidden Valley Ranch packets and make it with light mayo and skim milk.
